How to cook pasta: Italian chefs have pointed out 10 misconceptions that are common to us

In Italy, pasta is a national pride. They are used with various sauces and seasonings. But to cook this dish, you need to know some rules and techniques, otherwise the result will not be quite comforting.

Italian chefs have named the 10 most common mistakes that we make when cooking pasta.

1. The quality of pasta from different manufacturers can vary greatly.

Accordingly, the price tag of products depends on several factors. Some brands are more expensive and there are many reasons for this.

One of them is production equipment.

A bronze industrial extruder is certainly better than a teflon one. Bronze provides a slower drying process, which gives the product porosity. This means that the cooked pasta is well soaked in sauce.

2. Size matters.

When you have decided which seasoning to make, it is important to choose the right size of pasta.

The long ones are combined with more liquid sauces, and the short one is suitable for meat sauce and finely chopped vegetables.

3. Proportions of water.

Here the calculation is absolutely simple: one liter of water is enough to cook 100 grams of pasta. Too little water causes the pasta to brew outside faster than the inside.

In addition, when the water is low, it produces a higher concentration of starch, which can lead to the bitterness of the dish.

4. Do not rinse the pasta after cooking.

If you want to stop the process of cooking pasta, you have two options: add a glass of cold water to the pan or drain the water altogether, add some oil and stir it so that they do not stick together. They should cool down by themselves. If you rinse the pasta, the starch, which helps to mix them with the sauce, will be washed off, and the result will not be quite good.

5. Pay attention to the cooking time.

If you bought a new type of pasta, then cook it so as not to exceed the time indicated on the package. But do not forget to check readiness: on some packages the cooking time is indicated incorrectly. Before mixing the pasta with the sauce, you need to dry them for a couple of minutes.

6. When to salt pasta?

This question often causes discussions in the family. There are two options. If you put salt in water until boiling, it raises the boiling point and provides a higher temperature for the water in which the pasta is boiled. And if you put salt when the water boils, it will save some energy. The only thing that should be avoided is to salt the pasta that you just poured into the pan, because this will further reduce the temperature of the water.

7. Never cover the pan with the lid when the pasta has already been thrown.

Everybody knows about it, but it's not superfluous to remind.

8. It is useless to pour a little oil into the pan so that the pasta does not stick.

We know that these are two substances that cannot be bound at the molecular level, so there is no point in resorting to this “trick”. It is better to periodically stir the pasta and keep track of the time.
